**1. Prepare the Hummus:**
- Drain and rinse the chickpeas. For an extra smooth hummus, remove the skins (optional).
- In a food processor, combine chickpeas, tahini, olive oil, lemon juice, and a pinch of salt.
- Add a couple of ice cubes or cold water slowly as you blend, until you reach your desired consistency. Adjust seasoning to taste.
- Leave in the fridge until ready to assemble the bowl.
